Peanut Butter Oatmeal Cookies

A crunchy Oatmeal cookies served tasty during meal time . This healthy snack recipe is a perfect dish for family daily cookies . The salty peanut butter blend nicely with the healthy oats . The easy recipe and simple ingredients makes this recipe could be a favourite home made cookies



Peanut Butter Oatmeal Cookies Recipe
(makes 12 serving)

Ingredients :

3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1/2 cup butter, softened
1/2 cup peanut butter
1/2 cup white sugar
1/2 cup packed light brown sugar
1 egg
1 teaspoon vanilla extract
1 cup quick cooking oats
3 tablespoons butter, softened
1 cup confectioners' sugar
1/2 cup smooth peanut butter
2 1/2 tablespoons heavy whipping cream

Cooking Direction :

In a large bowl, cream together 1/2 cup butter or margarine, 1/2 cup peanut butter, white sugar, brown sugar, and vanilla. Add egg and beat well.
In another bowl, combine the flour, baking soda, baking powder, and salt. Add these dry ingredients to the creamed mixture. Stir. Add oatmeal and stir.
Drop by teaspoons onto greased baking sheet, and press each mound down with a fork to form 1/4 inch thick cookies. Bake at 350 degrees F (175 degrees C) for 10 minutes, or until cookies are a light brown.
To Make Filling: Cream 3 tablespoons butter or margarine with the confectioners' sugar, 1/2 cup smooth peanut butter, and the cream. Spread filling onto half of the cooled cookies, then top with the other half to form sandwiches.

Apple Muffins

Making your own Muffins for your beloved family can be enjoyable cause it's an easy muffins recipe and needs plenty of time only.
Try this soft and fruity Apple Muffins and enjoy them during an afternoon tea or coffee break.



Apple Muffins Recipe

(Makes 12 muffins)


Ingredients
:

Melted butter or margarine (optional), for greasing

300g (2 cups) plain flour

1 tbs baking powder

2 tsp ground cinnamon

150g (3/4 cup, firmly packed) brown sugar

2 medium (about 375g) Granny Smith apples, cored, peeled, chopped

125g (3/4 cup) seedless raisins

125g butter or margarine, melted, coole
2 eggs, lightly whisked
185mls (3/4 cup) milk


Cooking Direction :


Preheat oven to 180°C.

rush the muffin pans with the melted butter or margarine to lightly grease. or line the pans with paper muffin cases.

Mix the plain flour, baking powder and cinnamon together into a large bowl. stir
Stir in the brown sugar, apples and raisins till well combined.


Whisk together the butter or margarine, eggs and milk till well combined.
( Blending the wet ingredients before adding them to the flour mixture makes it easier to evenly combine the two )


Add the milk mixture to the flour mixture and stir with a large metal spoon until just combined.
( don't over-mixed, cause it'll make the cooked muffins have a tough texture )


Spoon the mixture evenly into the muffin pans.

Bake the muffins in preheated oven for 20 minutes or till golden and cooked through.
( insert a skewer into the centre of one - if it comes out clean, it is cooked )


When cooked, remove from oven and stand for about 3 minutes before turning onto a wire rack

Serve warm or at room temperature.
Store in an airtight container for up to 1 day.

Choco Chip Muffins

Choco Chip Muffins

(makes 1 dozen muffins)

Ingredients :


3 (1-ounce) squares unsweetened chocolate, coarsely chopped

1 1/2 cups (9-ounces) semisweet chocolate chips - divided use

1 cup all-purpose flour

1/2 teaspoonful baking soda

1/2 teaspoonful salt

2 large eggs

1 cup light brown sugar, firmly packed

2/3 cup whole milk

1/2 cup (1 stick) unsalted butter, melted and slightly cooled

1 teaspoonful vanilla extract



Cooking Direction :


Melt the unsweetened chocolate and 1/2 cup of semisweet chocolate chips in the top of a double boiler over simmering water.
Remove from heat and cool slightly.


Preheat oven to 350*F (175*C).

Grease and flour a 12-cup muffin tin or line with paper liners.


In a large bowl, whisk together flour, baking soda and salt.
Make a well in the center. Set aside.


In another bowl, beat eggs
Add the brown sugar, milk, butter, melted chocolate mixture and vanilla; mix well.
Pour this mixture into well of flour mixture.
Stir till just moistened; do not over mix.
Gently fold remaining chocolate chips into batter.


Fill prepared muffin tins two thirds full.

Bake for 20 to 25 minutes or till muffins test done.
Cool in pan on wire rack.

Cheese Brownies

Easy Recipe for a home made Cookie dish .



Cheese Brownies Recipe :
( makes 16 brownies )

Ingredients :

For the Brownie Layer :

1/2 cup (113 grams) unsalted butter, cut into pieces

4 ounces (114 grams) unsweetened chocolate, coarsely chopped

1 1/4 cups (250 grams) granulated white sugar

1 teaspoonful pure vanilla extract

2 large whole eggs

1/2 cup (70 grams) all purpose flour

1/4 teaspoonful salt


For the Cheese Layer :

8 ounces (227 grams) cream cheese, at room temperature

1/3 cup (65 grams) granulated white sugar

1 teaspoonful pure vanilla extract

1 large whole egg



Cooking Direction :


Preheat oven to 325 degrees F (160 degrees C)

place the rack in the center of the oven.

Prepare a 9 x 9 inch (23 x 23 cm) square baking pan that has been lined with aluminum foil across the bottom and up two opposite sides of the pan. Set aside.


Melt the butter and the chocolate In a stainless steel (heatproof) bowl placed over a saucepan of simmering water,


Remove from heat

Stir in the sugar and vanilla extract

Add the eggs, one at a time, beating well (with a wooden spoon) after each addition

Stir in the flour and salt and beat, with a wooden spoon, till the batter is smooth and glossy and comes away from the sides of the pan (about one minute).


Remove 1/2 cup of the brownie batter and set aside.


Place the remainder of the brownie batter evenly into the prepared pan.


In the bowl of your food processor (or with a hand mixer), process the cream cheese till smooth

Add the sugar, vanilla, and egg and process till creamy and smooth


Spread the cream cheese filling over the brownie layer.

Spoon small dollops of the reserved brownie batter evenly on top of the cream cheese filling.

Then with a table knife or wooden skewer, swirl the two batters without mixing them.


Bake in the preheated oven for about 25 minutes or till the brownies start to pull away from the sides of the pan and the edges of the brownies are just beginning to brown


Remove from oven and place on a wire rack to cool

Refrigerate the brownies fr
at least two hours till they are firm enough to cut into squares

Once chilled, remove the brownies from the pan by lifting with the ends of the foil

transfer to a cutting board. With a sharp knife, cut into 16 squares.


These brownies can be stored in the refrigerator for several days

1/2 cup (1 stick) (113 grams) unsalted butter, cut into pieces

2 tablespoonful (15 grams) cocoa powder

1 cup (200 grams) granulated white sugar

1 teaspoonful pure vanilla extract

3 large eggs

3/4 cup (95 grams) all-purpose flour

1/4 teaspoonful salt

3/4 cup (125 grams) semi-sweet chocolate chips (optional)



Cooking Direction :


Preheat oven to 350 degrees F (177 degrees C)

place the rack in the center of the oven

Butter (or spray with a nonstick cooking spray) an 8 inch (20 cm) square pan.

Melt the chocolate and butter in a large stainless steel bowl placed over a saucepan of simmering water.


Remove from heat and stir in the cocoa powder and sugar .

Whisk in the vanilla extract and eggs, one at a time, beating well after each addition.

Stir in the flour, salt and chocolate chips (optional).


Pour the mixture into the prepared pan

Bake for about 30 minutes, or till a toothpick inserted in the center comes out with a little batter and a few moist clumps clinging to it.

( Do not over bake )
Remove from oven and allow to cool on a wire rack


Serve at room temperature or chilled

These freeze very well
