Duck Roast

Duck Roast is a delightful chinese dish from duck which tasty and simple recipe . From the Origin Chinese Food the duck recipe can be your family variation of daily food at your dinning table . Bring an aromatic Chinese Cuisine for duck delicious in this recipe .


Duck Roast Recipe

Ingredients :


1 duck, about 5 pounds, fresh or frozen

1 tablespoonful salt

1 scallion

3 slices fresh ginger


For the Glaze:

1 tablespoonful light corn syrup

2 tablespoons water

1 tablespoon soy sauce


Few sprigs fresh cilantro, for garnish



Cooking Direction :


Thaw the duck, if frozen.
Remove any excess fat, and rinse and pat dry with paper towels.
Rub the entire surface of the duck, inside and out, with the salt.
Cover and refrigerate for several hours, or, overnight.


Put the scallion in the cavity and lay the slices of ginger on top of the duck.
Add at least 2 inches of water to a large flameproof roasting pan with a lid and put the pan on the stove.
Place a large rack in the roasting pan and bring the water to a boil.


Choose an oval casserole large enough to hold the duck and small enough to fit into the roasting pan.

Place the duck in the casserole and then put the casserole on the rack.

Cover and steam for 1 hour, checking the water level from time to time and adding more boiling water if necessary.
Save the duck broth to use in soups or stir fry dishes.
When done, remove the duck from the casserole and place it on a rack to dry.


Combine the ingredients for the glaze in a small saucepan and bring to a boil. With a pastry brush, paint the hot glaze over the surface of the duck.
Allow duck to dry for 1 hour.


Preheat the oven to 375F. Roast the duck, breast side down, for 20 minutes. Turn over and continue to roast for 40 more minutes.


Transfer duck to a chopping board and allow to cool slightly. Using a cleaver, disjoint and cut the duck through the bone into bite size pieces.


Arrange the pieces on a serving platter, garnish with cilantro and serve.

Apple Caramel Wonton

Apple Caramel Wonton Recipe :


Ingredients :

4 medium tart apples, peeled

64 wonton wrappers

(buy package at stores or see link " Wonton Wrappers Recipe " for home making )

3 cups vegetable oil

1 jar (12 oz size) caramel ice cream topping, warmed



Cooking Directions :


Cut each apple into four wedges, cut wedges into four pieces

Place a piece of apple in the center of each wonton wrapper.

Brush edges of wrapper with water and bring up around apple, pinch to seal

Cover with plastic wrap till ready to cook


Heat oil in a fondue pot to 375F.

Use fondue forks to cook wontons until golden brown, about 1 minute.
Cool slightly


Dust with powdered sugar and drizzle with caramel sauce

Asparagus Fried Wonton

Ingredients :


Oil for deep frying

1 Envelope vegetable soup mix

1 cup Asparagus, finely chopped

1/4 cup Water chestnut, finely chopped

20 Won Ton wrappers (about 3" square)

Soy sauce, (optional)



Cooking Directions:


Heat a saucepan till hot


Meanwhile, in medium bowl combine 1 envelope Instant Spring Vegetable Soup Mix, asparagus, and water chestnuts.


Place 2 teaspoonful of the mixture on the center of each Won Ton wrapper.

Moisten corners with water, fold wrappers in half to form a triangle, and press edges to seal.

Form Wonton by bringing together two opposite points and overlapping
Moisten overlapping points and press to seal well

Fry in hot oil until golden brown; drain
Serve, with soy sauce ( if desired )

8 oz. crab meat

1 cup Napa cabbage, finely diced

2 tablespoonful soy sauce

2 tablespoonful cilantro, finely chopped

2 tablespoonful oyster sauce

1 tablespoonful fish sauce

1 teaspoonful cayenne pepper



Cooking Directions :

Combine all ingredients in a bowl and stir together.

Basic Wonton Filling

In Chinese Cuisine we often hear Wonton in many chinese recipe . Wonton / Wontons it self is a bite-size small parcel made up of a paper-thin wheat-based sheet wrapped around a filling of minced meat with a variety of complementary ingredients. A traditional Chinese Food which still proud of cantonese internationally .
Here's a basic Wonton Filling Recipe which can be applied in many kind of recipe . Use any type of meat as you desired in this recipe .

Lobster and Crab Wonton Filling



Basic Wonton Filling Recipe

Ingredients
:

2 -(up to)

2 1/2 cup Meat

1 cup Vegetables

1 Scallion stalk

1 tablespoonful Soy sauce

1/2 teaspoonful Salt



Cooking Direction :


Mince or shred meat and vegetables.

Combine with soy sauce and salt, blending well.

Let stand 30 minutes.



Wrap mixture in wonton skins:

The quantities given are for 40 wonton skins or about 1/2 pound.




Place about a teaspoonful filling in the center of each wonton wrapper














Then with your fingers, “paint” some egg wash (or water) along all four edges, then fold them over to make a triangle


Press on the joined edges to seal it








Take this triangle shape and wrap it around your finger, joining the two outside points of the triangle so that they end up looking like this…
Fold them however you want.

Tips :
( especially with this potted meat stuff ) Seal the filling well, lest you have “polluted” oil.

Wonton Wrappers

Wonton Wrappers is the basic ingredients of many Wonton Recipe from Chinese Food . Wonton wrappers can be bought at the Asian Groceries Store or Supermarkets . But making your own Wonton wrappers at home isn't impossible and not too complicated also quick prepare .

Wonton Wrappers Recipe
(
Makes about 3 dozen squares)

Ingredients :


1 large egg white

About 1/3 C water

1 C all-purpose flour

1/4 teaspoonful salt



Cooking Direction :


Combine the flour and salt
In the bowl of a standing mixer (or use a hand mixer)
Add the egg white and mix with the paddle attachment over medium speed,
Slowly adding water until the dough forms a ball. (Use all the water if needed)
Continue beating the dough with the paddle for several minutes, or remove from the mixer to knead by hand.
(
Adjust the flour and/or water content by increments as necessary till it form a smooth elastic dough that isn’t sticky ).

Cut the dough into four equal parts and run through a pasta maker up to the thinnest setting, or roll out by hand using a liberal amount of bench flour.
Cut the sheets into roughly 3inch squares, and make sure they are well sprinkled with flour on both sides before stacking or overlapping to prevent them from melding together again.
Use immediately or cover for a short while with a damp towel to keep them from drying out.

Beef Oyster Sauce
Recipe
(Served 3)


Ingredients :

1 lb. flank steak

15 pieces ginger (quarter large)

15 pieces green onions (about 1" long)

2 Tablespoonful cooking oil
4 cups cooking oil ½ lb. Chinese broccoli
½ Tablespoon rice wine

½ teaspoonful salt

1 teaspoonful sugar
Seasoning

For the Sauce :

2 Tablespoonful oyster sauce

1 teaspoonful sugar
½ teaspoonful cornstarch
½ teaspoonful sesame oil

1 Tablespoonful water

For the Marinade :
½ teaspoonful baking soda
1 Tablespoonful cornstarch

1 Tablespoonful soy sauce
1 teaspoonful sugar

3 Tablespoonful water

Cooking Directions :


Slice the beef thinly and cut into 1"x2" pieces,
Place them in a bowl and marinate for at least ½ hour (the longer, the better taste)

Add in 2 Tablespoonful of cooking oil and mix well prior to cooking.


Boil the Chinese broccoli in boiling water for about 2 minutes (don't over boil cause it'll reduce the health nutritions)
Remove it from the water using a colander

Stir fry the Chinese broccoli with 2 Tablespoonful of cooking oil
Season with wine (optional), salt, and sugar, (taste it if necessary)
Lay neatly on a serving plate.


Heat 4 cups of cooking oil in the wok
Add the beef and stir fry for about 10 seconds, or till its color turns light .
Remove the beef and drain off the oil.


Use another 2 Tablespoonful of cooking oil to stir fry the ginger and green onions
Add the beef, and stir quickly over high heat.

Add the seasoning sauce, Stir till it's thickened and heated through.

Pour over the Chinese broccoli
Serve hot
