Fresh Strawberry Pie

Ingredients :


2 (8 inch) prepared Pie Crust recipe / Pie Dough Recipe , baked

2 1/2 quarts fresh strawberries

1 cup white sugar

2 tablespoonful cornstarch

1 cup boiling water

1 (3 ounce) package strawberry flavored gelatin

Whipped Cream ( optional )



Cooking Direction :


Mix together the sugar and corn starch
In a saucepan. Make sure to blend corn starch in completely.
Add boiling water, and cook over medium heat till mixture thickens.

Remove from heat.
Add gelatin mix, and stir till smooth.
Let mixture cool to room temperature.


Place strawberries in baked pie shells / pie crust position berries with points facing up.
Pour cooled gel mixture over strawberries.


Refrigerate till set.
Serve with whipped cream, if using

Ingredients


6-7 large fresh ripe freestone peaches, sweet and juicy

1/2 cup honey

1/4-1/2 juice of fresh lemon

1/2 teaspoonful cinnamon

2 Tablespoonful Quick Cooking Tapioca

1/4 cup unsalted butter-chilled and cut into cubes

1/2 teaspoonful almonds extract (optional)

2 Tablespoonful heavy cream for top crust glaze

Prepared Pie dough / Pie Crust Recipe for top and bottom crusts



Coking Direction :


Preheat oven to 400 degrees.


Put the peaches into a large pot of boiling water.

Bring pot to a boil and turn off immediately.


Spoon out peaches into a large bowl of ice cold water, to stop the cooking process and let cool completely for about 5 minutes.


Peel off peach skins
Slice into 1/2 inch wedges into a medium size mixing bowl.

Add the honey, lemon, cinnamon, almond extract (if using), and tapioca, mix well.

Let stand for about 5 minutes.

Mix the peach pie filling thoroughly, then place about an inch deep layer into the raw dough pie shell.

Dot evenly with 1/2 of the butter pieces.

Add the remaining filling and dot evenly with the rest of the butter.


Make a lattice top and trim the lattice edges close to the inside of the pie shell so that the lattice strip just touches the inside edge of the fluting.
Use a pastry brush to coat the lattice strips with heavy cream, staying away from the fluted edges.


Place pie dish on an oven guard to catch pie drippings.

Bake for about 1 hour, 20 minutes.

For lattice top crust, pie crust will be golden brown and filling will be boiling in the center.


When the crust is baked to the color desired, add a pie crust shield to prevent over-baking of fluted edge.


Allow to cool completely before serving or refrigerating.

Pie Crust / Pie Dough

The special things about the crust is that it makes from the both shortening and butter, which make the crumbliness of a shortening crust along with the flakiness of a butter crust.

Pie Crust Recipe / Pie Dough Recipe :

Ingredients :


12 tablespoonful (1 1/2 sticks) very cold unsalted butter

3 cups all-purpose flour
1 teaspoonful kosher salt

1 tablespoonful sugar

1/3 cup very cold vegetable shortening

6 to 8 tablespoonful (about 1/2 cup) ice water



Cooking Direction :


Dice the butter and return it to the refrigerator while you prepare the flour mixture.


Place the flour, salt, and sugar in the bowl of a food processor (or Using a Hand Mixer ) fitted with a steel blade and pulse a few times to mix.


Add the butter and shortening. Pulse 8 to 12 times, till the butter is the size of peas.
With the machine running, pour the ice water down the feed tube and pulse the mac
hine till the dough begins to form a ball.

Dump out on a floured board and roll into a ball.
Wrap in plastic wrap and refrigerate for 30 minutes.

Cut the dough in half.
Roll each piece on a well-floured board into a circle, rolling from the center to the edge, turning and flouring the dough to make sure it doesn't stick to the board.

Use the rolling pie, gently lay the pie crust over the whole pie pan.



When the pie crus
t is laying over the whole pie pan, lift it gently around the edges and drop it down into the bottom of the pie pan to get the dough in the pan.




Use your fingertips to pat the pie crust down into the pan, so
that it is completely formed into the pan, and is snug up against the sides of the pie pan.




If there are any edges are "broken" use your fingertips to push the sides together. Overlap the edges a little and press down just hard enough to smoosh the edges of dough together. If you've got a big tear or rip in the pie crust, fix that by getting a piece of rolled out dough that's slopping over the edge, pull it off, and lay it in the pan over the rip, so that it hangs over the edge. Use your fingertips to push the pieces together





Use a butter knife to cut away the pie crust that is hanging over the edge. If you need to repair the pie crust in the pan, or a gaping whole in the edge, use these scraps













The Next Step is to crimp the pie crust

To crimp the pie crust pinch the dough together with the index finger and thumb of one hand, while you push against the index finger and thumb of your other hand.
Notice that your right thumb and index finger have pinched the dough.
Push forward with your right thumb, with your left index finger stopping the dough.




Once you've made the first crimp, move along the edge of the pie pan, the width of your index finger.
Now crimp again. Move along the edge, another fingertip width.









Once you've crimped the entire edge, then use a fork to lightly prick the entire bottom of the pie crust.
So that when you pre-bake the pie shell, the steam will be able to escape (instead of being trapped in the dough, and making the dough bulge in the bottom).



Use the fork to poke holes along the sides



Now the pie crust is crimped Pre-bake the pie crust at about 400 degrees for 5-10 minutes, till the pie crust is puffy and looks dry

Ingredients
:

4 pounds Apples, peeled, quartered, and cored

1 lemon, zested

1 orange, zested

2 tablespoonful freshly squeezed lemon juice

1 tablespoonful freshly squeezed orange juice

1/2 cup sugar, plus 1 teaspoon to sprinkle on top

1/4 cup all-purpose flour

1 teaspoonful kosher salt

3/4 teaspoonful ground cinnamon

1/2 teaspoonful ground nutmeg

1/8 teaspoonful ground allspice

1 prepared Pie Crust / Pie Dough
Recipe
1 egg beaten with 1 tablespoonful water, for egg wash



Cooking Directions :


Preheat the oven to 400 degrees F.


Cut each apple quarter in thirds crosswise
Combine the apples with the zests, juices, 1/2 cup sugar, flour, salt, cinnamon, nutmeg, and allspice, in a large bowl


Roll out half the pie dough and drape it over a 9- or 10-inch pie pan to extend about 1/2-inch over the rim.
Don't stretch the dough; if it's too small, just put it back on the board and re-roll it.


Fill the pie with the apple mixture.
Brush the edge of the bottom pie crust with the egg wash so the top crust will adhere.
Top with the second crust and trim the edges to about 1-inch over the rim.
Tuck the edge of the top crust under the edge of the bottom crust and crimp the 2 together with your fingers or a fork.
Brush the entire top crust with the egg wash
Sprinkle with 1 teaspoon sugar, and cut 4 or 5 slits.


Place the pie on a sheet pan and bake for 1 to 1 1/4 hours, or till the crust is browned and the juices begin to bubble out. Serve warm.
