Peanut Butter Oatmeal Cookies Recipe
(makes 12 serving)

Ingredients :

3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1/2 cup butter, softened
1/2 cup peanut butter
1/2 cup white sugar
1/2 cup packed light brown sugar
1 egg
1 teaspoon vanilla extract
1 cup quick cooking oats
3 tablespoons butter, softened
1 cup confectioners' sugar
1/2 cup smooth peanut butter
2 1/2 tablespoons heavy whipping cream

Cooking Direction :

In a large bowl, cream together 1/2 cup butter or margarine, 1/2 cup peanut butter, white sugar, brown sugar, and vanilla. Add egg and beat well.
In another bowl, combine the flour, baking soda, baking powder, and salt. Add these dry ingredients to the creamed mixture. Stir. Add oatmeal and stir.
Drop by teaspoons onto greased baking sheet, and press each mound down with a fork to form 1/4 inch thick cookies. Bake at 350 degrees F (175 degrees C) for 10 minutes, or until cookies are a light brown.
To Make Filling: Cream 3 tablespoons butter or margarine with the confectioners' sugar, 1/2 cup smooth peanut butter, and the cream. Spread filling onto half of the cooled cookies, then top with the other half to form sandwiches.

Makes 12 servings)

Ingredients :
2 tb butter or margarine, melted
1/2 ts instant espresso powder

1 c vanilla wafer crumbs

24 oz. cream cheese (or Neufchatel cheese ), room temperature

8 oz. Mascarpone cheese

1 2/3 c sugar

4 lg eggs, room temp.

1 ts vanilla extract

1 pinch salt

2 ts instant espresso powder

1 tb hot water

2 tb Brandy
/ Rhum essens
1 oz. semisweet chocolate, grated

2 ts unsweetened cocoa

Shredded Chocolate bar



Cooking Directions :

Crust:

Preheat oven to 350 degrees F. Butter an 8-in. springform pan.
Stir in butter and espresso powder in small bowl until combined.
Stir in crumbs until crumbs are evenly moistened.
Pat evenly over bottom of prepared pan.
Bake 10 minutes.
Cool on wire rack. Keep oven on.
Tightly cover outside bottom and sides of springform pan with heavy-duty foil.



For the Filling :


Beat the cream cheese and mascarpone in large mixer bowl at medium-high speed until light and fluffy, 2 minutes.
Gradually beat in sugar, scraping down sides of bowl with rubber spatula until completely smooth, 3 minutes.
Reduce speed to medium and beat in vanilla and salt.
Add eggs, one at a time, beating just until blended after each addition. Pour 4 cups filling over crust in prepared pan and place in large roasting pan.
Dissolve espresso in hot water.
Fold into remaining filling with brandy / rhum essens and grated chocolate.
Spoon mixture evenly over filling in pan; smooth top with spatula.
Place pan on oven rack.
Pour enough hot water into roasting pan to come 1" up side of springform pan.
Bake 1 1/4 hours or until center is just set.
Remove cheesecake from water bath.
Cool completely on wire rack.
Remove foil. Cover and refrigerate overnight.

Before serving, run knife around edge of pan; remove sides.
Sprinkle lightly with cocoa and shredded chocolate bar on top

Duck Roast Recipe

Ingredients :


1 duck, about 5 pounds, fresh or frozen

1 tablespoonful salt

1 scallion

3 slices fresh ginger


For the Glaze:

1 tablespoonful light corn syrup

2 tablespoons water

1 tablespoon soy sauce


Few sprigs fresh cilantro, for garnish



Cooking Direction :


Thaw the duck, if frozen.
Remove any excess fat, and rinse and pat dry with paper towels.
Rub the entire surface of the duck, inside and out, with the salt.
Cover and refrigerate for several hours, or, overnight.


Put the scallion in the cavity and lay the slices of ginger on top of the duck.
Add at least 2 inches of water to a large flameproof roasting pan with a lid and put the pan on the stove.
Place a large rack in the roasting pan and bring the water to a boil.


Choose an oval casserole large enough to hold the duck and small enough to fit into the roasting pan.

Place the duck in the casserole and then put the casserole on the rack.

Cover and steam for 1 hour, checking the water level from time to time and adding more boiling water if necessary.
Save the duck broth to use in soups or stir fry dishes.
When done, remove the duck from the casserole and place it on a rack to dry.


Combine the ingredients for the glaze in a small saucepan and bring to a boil. With a pastry brush, paint the hot glaze over the surface of the duck.
Allow duck to dry for 1 hour.


Preheat the oven to 375F. Roast the duck, breast side down, for 20 minutes. Turn over and continue to roast for 40 more minutes.


Transfer duck to a chopping board and allow to cool slightly. Using a cleaver, disjoint and cut the duck through the bone into bite size pieces.


Arrange the pieces on a serving platter, garnish with cilantro and serve.

  1. Dissolve the sugar completely over low heat (step 1) before bringing the mixture to a simmer. Using superfine sugar, also sold as "baker's sugar," makes this easier. To check whether the sugar has dissolved, scrape the pan bottom with a heatproof spatula, pull the spatula up, let the syrup on it cool for a few seconds, then rub a drop between your fingers. If you can feel grains of sugar, it hasn't dissolved yet.
  2. Prevent sugar crystals from forming on the sides of the pan in step 2 by brushing down the sides with a wet pastry brush a few times.
  3. Let the mixture cool to lukewarm (exactly 110°) before beating it (step 3); otherwise, the fudge may stiffen and become grainy. Pouring it into a large, shallow bowl helps it cool faster, but don't stir it too early.
  4. Beat the fudge well once it has cooled to 110°. Chocolate fudge thickens more than maple fudge at this stage, but both dull slightly and take on a lighter color after beating; that's when they're ready to pour into the pan.

Cooking Direction :


In a 3- to 4-quart heavy-bottomed pan over medium-low heat, stir sugar, cream, and corn syrup, continually scraping the bottom of the pan with a heatproof flexible spatula, until sugar is completely dissolved, about 15 minutes.

Stir in unsweetened and bittersweet chocolate until melted.

Increase heat to medium and bring mixture to a simmer.


Cook, occasionally stirring mixture and brushing down sides of pan with a wet pastry brush, until mixture reaches 235° on a candy thermometer.

Remove from heat and pour into the bowl of a standing mixer or another large bowl.

Add butter and vanilla but do not stir, insert candy thermometer and let mixture stand undisturbed until cooled to 110°, 1 1/2 to 2 hours.


Line a 9-inch square pan with foil; lightly butter foil.

With the paddle attachment of standing mixer or a sturdy wooden spoon, beat the chocolate mixture vigorously (on high speed if using mixer; reduce speed if motor starts to labor) until mixture thickens and loses its glossy sheen, about 5 minutes with a mixer, about 10 minutes by hand.

Scrape into pan, smooth top, and chill until firm to the touch, at least 2 hours, or up to 1 day.


Lift foil to remove fudge from pan

Cut fudge into 1-inch squares.


Store cut fudge airtight in the refrigerator up to 1 week.


note :
To keep longer (up to 1 month), wrap uncut fudge airtight and chill, cut into squares as you want to use it.

Cooking Direction :

Add yeast to warm water; let sit 5 minutes.


Combine 1-1/2 cups flour, sugar, salt and oil in a large mixing bowl.
Add yeast mixture and stir until well-combined.
Add remaining 1-1/4 cups flour.

Knead dough 3 minutes; form into a ball.
Let sit 1 hour. Dough should double in size.


Divide dough into 12 pieces and roll each piece into a ball (dust hands with flour to prevent sticking).

Place balls on a cookie sheet or lightly floured surface. Let rest 15 minutes.

Roll each ball into a 16-inch length and form into a pretzel shapes.
Or, divide each ball in half and roll each half into a 3-inch stick, about 3/4-inch wide. Let rest a few minutes.


Meanwhile, preheat oven to 475°F.
Grease a large cookie sheet. In a non-aluminum pot, bring remaining 4 cups water to a boil with baking soda.


Add pretzels to the boiling water in batches (do not crowd pot) and boil 1 minute, turning once.
Shake off excess water.
Place pretzels on cookie sheet and sprinkle with coarse salt.

3 Tablespoonful soy sauce

1 Tablespoonful brown sugar

1-2 teaspoonful chilli sauce ( 1-2 fresh chillies, minced

tips : 2 chillies for spicy, 1 for medium, 1/2 for mild

1 Tablespoonful fish sauce

1/4 cup chopped fresh coriander leaves and stems

1 Tablespoonful rice vinegar/ red wine vinegar

2 cloves garlic, minced

2 Tablespoonful water


For the Garnish :

fresh coriander leaves

fresh basil leaves



Cooking Direction :


Rinse fish fillets and pat dry.

Drizzle a little lime juice over each fillet, then sprinkle with salt.


Place the first fillet in the middle of a sheet of tin foil / parchment paper / banana leaf.

Fold over the ends of the sheet, then the sides.


Place seam-side down in a baking pan or dish.

Note: Make sure the dish has sides, as some juice might escape.


Bake at 350 degrees for 15 minutes.


While the fish is baking, prepare the sauce.

Put all sauce ingredients in a sauce pan, stirring well.

Bring to a soft boil.

Reduce heat to medium-low, simmering till lemongrass has softened (about 5 minutes).

Turn the heat to low

Taste if necessary to get This sauce strong and tangy ( a balance between sweet and sour, with a hit of spice chilli and garlic)

tips :

If the sauce is too salty for your taste, add a squeeze of lime juice. If it's too sour, add a little more brown sugar. If not salty enough, add a little more fish sauce.

Cover the sauce to keep it warm.

After 15 minutes, open one of the fish "packets".

Insert a fork into the center of the fillet and gently pull apart.

If the inner flesh is still translucent, return the fish to the oven for 5 more minutes.

If it's opaque and comes apart easily, the fish is done.


If you've used banana leaves, serve the fish right in the packet

(just drain out the juices beforehand),

placing the packet on a serving plate.

Otherwise, remove the fillets from the foil/paper, and place on plates with the sauce either drizzled over the top, or on the side.

Add a sprinkling of fresh coriander and basil leaves, and serve with plenty of Thai jasmine rice.

Cooking Direction :


Marinate the Onion

Put the onion in a small bowl and pour in enough red wine vinegar to cover well.
Set aside for at least 30 minutes or up to several weeks.


Marinate the Fish

Pour the olive oil into a small bowl
Add the ancho chile powder, oregano, cumin, chopped cilantro, and jalapeño. Mix well.
Put the fish on a dish and pour the marinade over it, making sure to coat the fish well on both sides.
Allow to marinate for 20 minutes.


Cook the Fish

Heat a nonstick sauté pan over medium-high heat.
Remove the fish from the marinade and place in the hot pan (there is no need to add more oil).
Season the fish with salt.
Cook the fish for 4 minutes undisturbed, then turn over, and cook for another 2 minutes.
Remove the pan from the heat and flake the fish into the pan with a fork, making sure to mix in all the marinade that has stuck to the bottom of the pan.
Check for seasoning and add more salt if necessary. Set aside.


Heat the Tortillas

Place four of the tortillas on a plate and sandwich them between two slightly dampened sheets of paper towel.
Microwave on high for 45 seconds.
Place the warm tortillas in a towel-lined basket or plate and cover.
Repeat with the remaining tortillas.


Assemble and Serve

To assemble the tacos, place a heaping spoonful of the marinated flaked fish onto the center of a tortilla.

Ingredients :


4 (6-ounce) skinless, boneless chicken breast halves
1/4 teaspoonful salt

1/4 teaspoonful black pepper

Cooking spray

2 tablespoonful chopped red onion

6 tablespoonful maple syrup

1/4 cup Dijon mustard

1 tablespoonful water

1 teaspoonful chopped fresh dill

1 teaspoonful grated orange rind



Cooking Direction :


Put each chicken breast half between 2 sheets of heavy-duty plastic wrap, pound each to 1/4-inch thickness using a meat mallet or small heavy skillet.
Sprinkle chicken evenly with salt and pepper.

Heat a large nonstick skillet over medium-high heat.
Coat pan with cooking spray.
Add chicken to pan, cook for about 4 minutes on each side or till done.
Remove chicken from pan, set aside


Reduce heat to medium.
Add onion to pan, cook 1 minute.
Add syrup and all remaining ingredients, cook 1 minute or till thoroughly heated, stirring frequently.

Put the chicken on the serving plate
Pour about 2 tablespoonful sauce on top

Heat a saucepan till hot

Moisten corners with water, fold wrappers in half to form a triangle, and press edges to seal.

Form Wonton by bringing together two opposite points and overlapping

Basic Wonton Filling Recipe

Ingredients
:

2 -(up to)

2 1/2 cup Meat

1 cup Vegetables

1 Scallion stalk

1 tablespoonful Soy sauce

1/2 teaspoonful Salt



Cooking Direction :


Mince or shred meat and vegetables.

Combine with soy sauce and salt, blending well.

Let stand 30 minutes.



Wrap mixture in wonton skins:

The quantities given are for 40 wonton skins or about 1/2 pound.




Place about a teaspoonful filling in the center of each wonton wrapper














Then with your fingers, “paint” some egg wash (or water) along all four edges, then fold them over to make a triangle


Press on the joined edges to seal it








Take this triangle shape and wrap it around your finger, joining the two outside points of the triangle so that they end up looking like this…
Fold them however you want.

Wonton Wrappers Recipe

Makes about 3 dozen squares)

Ingredients :


1 large egg white

About 1/3 C water

1 C all-purpose flour

1/4 teaspoonful salt



Cooking Direction :


Combine the flour and salt
In the bowl of a standing mixer (or use a hand mixer)
Add the egg white and mix with the paddle attachment over medium speed,
Slowly adding water until the dough forms a ball. (Use all the water if needed)
Continue beating the dough with the paddle for several minutes, or remove from the mixer to knead by hand.
(
Adjust the flour and/or water content by increments as necessary till it form a smooth elastic dough that isn’t sticky ).

Cut the dough into four equal parts and run through a pasta maker up to the thinnest setting, or roll out by hand using a liberal amount of bench flour.
Cut the sheets into roughly 3inch squares, and make sure they are well sprinkled with flour on both sides before stacking or overlapping to prevent them from melding together again.
Use immediately or cover for a short while with a damp towel to keep them from drying out.

1 lb. flank steak

15 pieces ginger (quarter large)

15 pieces green onions (about 1" long)

2 Tablespoonful cooking oil
4 cups cooking oil ½ lb. Chinese broccoli
½ Tablespoon rice wine

½ teaspoonful salt

1 teaspoonful sugar
Seasoning

For the Sauce :

2 Tablespoonful oyster sauce

1 teaspoonful sugar
½ teaspoonful cornstarch
½ teaspoonful sesame oil

1 Tablespoonful water

For the Marinade :
½ teaspoonful baking soda
1 Tablespoonful cornstarch

1 Tablespoonful soy sauce
1 teaspoonful sugar

3 Tablespoonful water

Cooking Directions :


Slice the beef thinly and cut into 1"x2" pieces,
Place them in a bowl and marinate for at least ½ hour (the longer, the better taste)

Add in 2 Tablespoonful of cooking oil and mix well prior to cooking.


Boil the Chinese broccoli in boiling water for about 2 minutes (don't over boil cause it'll reduce the health nutritions)
Remove it from the water using a colander

Stir fry the Chinese broccoli with 2 Tablespoonful of cooking oil
Season with wine (optional), salt, and sugar, (taste it if necessary)
Lay neatly on a serving plate.


Heat 4 cups of cooking oil in the wok
Add the beef and stir fry for about 10 seconds, or till its color turns light .
Remove the beef and drain off the oil.


Use another 2 Tablespoonful of cooking oil to stir fry the ginger and green onions
Add the beef, and stir quickly over high heat.

Add the seasoning sauce, Stir till it's thickened and heated through.

Pour over the Chinese broccoli
Serve hot

Recipe / Daikon pickle Recipe
(makes about 4 quarts)

Ingredients :
1 head garlic
2 piece ginger root (each about 1inch long)
2 tablespoonful Korean ground chile
2 tabl espoonful salt
2 large daikons / radish, peeled and cut into 1 inch cubes
1 bn mustard greens cut 1inch pieces
2 tablespoonful sugar


Cooking Direction :

Separate garlic cloves and peel.
Combine garlic, ginger, chile and salt in food processor or blender until finely minced.

Combine garlic mix with daikons
In a large bowl, making sure to rub seasoning into daikons.
(tips : If mixing with your hands, wear rubber gloves to avoid chile burn)

Place 4 (1-quart) jars on work surface.
Fill first jar about 1/4 full with seasoned daikons, top with thin layer of mustard greens and sprinkle with about 1/2 tablespoon sugar.
Add more seasoned daikons to jar till 1/2 full, top with mustard greens and sugar again.
Repeat 2 more times till first jar is filled.

Fill remaining jars following same steps.
Place jars in cool place and do not move till kimchi has fully fermented (about 3 to 4 days) before serving.
( Kimchi is ready when water rises from daikon ).

Refrigerate after opening the jars

Baechu Kimchi Recipe /
Korean cabbage pickle Recipe
( Makes about 2 quarts )


Ingredients :


1 head ( 2 1/2 to 3 pounds ) Chinese cabbage, outer leaves removed, cut into 1-inch squares
1/2 cup Kosher or sea salt
4-6 Scallions, finely chopped
2-4 cloves Garlic, minced
1 tablespoonful Ginger, minced
4-6 tablespoonful Korean chili flakes
1 tablespoonful Sugar


Cooking Direction :


Put the cabbage and salt to a large bowl and toss together well with clean hands.

Cover with plastic wrap and set aside for 2-5 hours.


Place the cabbage in a colander. Rinse out the bowl and then rinse the cabbage well with water to remove the excess salt

Squeeze out excess water and return cabbage to the bowl.


Add the remaining ingredients and stir together with a wooden spoon.

Place into a large clean glass or plastic crock, container or jar and tamp down to remove any air bubbles.


Cover with a lid and let set in a cool, dark place for 2-3 days.


Transfer to a new container and store refrigerated for up to two weeks

Kimchi Recipe
/ Kimchee Recipe

Ingredients :

1 cup plus 1 tablespoonful coarse sea salt or kosher salt

Water

2 heads Napa cabbage, cut into quarters or 2-inch wedges, depending on size of cabbage

1 bulb garlic, cloves separated and peeled

1 (2-inch) piece of ginger root

1/4 cup fish sauce or Korean salted shrimp

1 Asian radish, peeled and grated

1 bunch of green onions, cut into 1-inch lengths

1/2 cup Korean chili powder

1 teaspoon sugar (optional)

Sesame oil (optional)

Sesame seeds (optional)



Cooking Direction :


Dissolve 1 cup salt in 1/2 gallon water. Soak cabbage in the salt water for 3 to 4 hours.


Combine garlic, ginger, and fish sauce or shrimp in food processor or blender until finely minced.


In large bowl, combine radish, green onions, mustard greens, garlic mixture, chili powder, 1 tablespoon salt and optional sugar. Toss gently but thoroughly. (If mixing with your hands, be sure to wear rubber gloves to avoid chili burn.)


Remove cabbage from water and rinse thoroughly. Drain cabbage in colander, squeezing as much water from the leaves as possible.
Take cabbage and stuff radish mixture between leaves, working from outside in, starting with largest leaf to smallest.
Do not overstuff, but make sure radish mixture adequately fills leaves.
When entire cabbage is stuffed, take one of the larger leaves and wrap tightly around the rest of the cabbage.
Divide cabbage among 4 (1-quart) jars or 1-gallon jar, pressing down firmly to remove any air bubbles.


Let sit for 2 to 3 days in a cool place before serving.

Remove kimchi from jar and slice into 1-inch-length pieces. If serving before kimchi is fermented, sprinkle with a little bit of sesame oil and sesame seeds. Refrigerate after opening.


Note:
Kimchi will be good enough to eat straight for up to about 3 weeks. After about 4 weeks, once the kimchi gets too fermented to eat by itself, use it to make hot pots, flatcakes, dumplings, or just plain fried rice.
